This recipe creates a wonderfully crispy, golden-brown bottom and a tender, steamed top.

Ingredients

  • Frozen or fresh dumplings

  • 1-2 tablespoons of vegetable oil or other neutral cooking oil

  • 1/2 cup of water (for steaming)

  • Your favorite chili oil sauce or dipping sauce

  • Optional garnishes: chopped green onions, sesame seeds

Directions

  • Fry the bottom: Heat the oil in a large non-stick skillet or frying pan over medium-high heat. Arrange the dumplings in the pan in a single layer, making sure they are not touching.
  • Brown the bottoms: Cook the dumplings for 2-3 minutes, or until the bottoms are a deep golden brown and crispy.
  • Steam the tops: Carefully add about 1/2 cup of water to the pan (be careful, as the water will sizzle and steam immediately). Immediately cover the pan with a lid and reduce the heat to medium.
  • Finish cooking: Let the dumplings steam for 5-7 minutes, or until the water has completely evaporated and the dumplings are cooked through. The wrappers will become soft and the filling will be hot.
  • Crisp up the bottom (optional): Once the water has evaporated, you can remove the lid and continue to cook for another minute or two on medium-high heat to re-crisp the bottoms if they became soft from the steaming.
